Brussel sprouts marinated in Captains Creek verjuice, lime and ginger on soft buttery noodles

Roulade
Lemoned silverbeet and swede with rabbit and lentil sauce

Salad
Wild greens, beetroot and pink fir potato roesti, Holy Goat mature veloute,
tangelo dressing

Jó étvágyat
Sandor’s Hungarian kohl rabi, stuffed with pork mince, rice, seasonings and extra
meatballs, poached in special sauce

Final
Quince, apple and rhubarb poached in Captains Creek sparkling and Rose with
matchstick shortbreads and organic yoghurt
