How It All Started
Our story began in 1996, where we had our very first event featuring a unique dish: 14 wild brown trout, cold-smoked by us and served with fresh, creek-harvested watercress and caper mayo.
In 2007, Spade to Blade merged with Daylesford Catering, bringing the Swiss-Italian culinary talents of Jt Morganti to our team. This fusion of expertise allowed us to offer a wider range of dishes for our clients.
